Why do massage therapists have to correct their client on correct draping procedures?

The simple answer is that the client is not a mind reader. Unless you spell out what you expect, he/she has no way of knowing. The truth is that massage is a huge field with many modalities and great variation in different parts of the world. Unless a practitioner says what is expected, you should assume good faith on the clients' part.Why do massage therapists have to correct their client on correct draping procedures?
Probably because they are embarrassed by seeing the human body.
